Barcelona Cooking

This "cuina" ( Catalan name for cooking) has Phoenicians roots, Greek and Roman. This ia a tasty cooking, which does not fear to mix sweetened and salty, honey, cinnamon, almonds, pinions, and dry fruits. Pork-butchery (embotits) is rough and vigorous, like its botifarra a black roll prepared with pig meat mixed with blood, its serran ham or its fuet. The botifarra that you can find in L'Empordà is sweetened and scented with lemon peel and cinnamon, a receipt that comes from the Middle Age. The more inland we go, we will find more often llonganises (sausages) on the table.

The most important ingredients of Catalan Cooking are : olive oil, garlic, sun and patience!!!

Catalonian dishes

- Pa amb tomaquet : Sliced bread with tomato scratched over and seasoned with olive oil and salt, and sometimes with garlic as well.

Romesco : It is a sauce from Tarragona, it is a finely ground mixture of tomatoes, red bell peppers, onion, garlic, almonds and olive oil.

Calçotada : It originates in Tarragona and it is made by cooking spring calcots (a local variety of spring onions) over an open flame. When cooked, the spring onions char on the outside but inside are tender. They are eaten by brushing out the outer layer of ash and dipping the vegetable into a romesco sauce.

Conill amb cargols : Rabbit cooked in a very perfumed sauce accompanied with snails.

Sarsuela: fish and shell fish cooked with olive oil with a fisherman style sauce made with onions, garlic, jerez, tomatoes, and paprika.

Suquet de peix : local bouillabaisse.

Fideua : a kind of paella with shrimps, crawfish and chicken, sweet peppers and tomatoes, but with noodles instead of rice.

Escudella I carn d?olla: local beef stew. Meats and vegetables cooked together in a large pot.

Peus de porc estofat : pig feet boiled accompanied with onions, mashed potatoes, garlic, wine and picada.

Arros negre : rice with squid, hence ?black?.

Faves ofegades : Large haricot beans with balck and white catalan sausage and green peas.

Bacalla a la llauna : Roasted SALT cod with sofriton gratin and baby white bean.

Bacalla amb panses i pinyons : roasted cod with raisins and pine seeds and tomato sauce.

Mariscada : Seafood plate with crawfish and shrimps fried with garlic and olive oil.

Daurada a la sal : Fish buried in salt.

Niu : A very ancient and complicated dish made with smoked dried cod, cod?s entrails and small wild fowl.

Picada : Is is made with garlic, parsley, burnt almonds and nuts all crushed.

Sofregit : A typical Spanish sauce made with garlic, onion, tomato and parsley.

Samfaina : It is a mixture of tomatoes, peppers, and aubergines lightly fried.

Tiro amb naps : roasted duck with turnips.

Coca de recapte : delicious pastry with vegetables and salted sardines.

Cassola del tros : Casserole of vegetables, pork and snails accompanied with potatoes.

Allioli : A sauce of olive oil and crushed garlic blended in a mortar.

Suquet de peix : bullabesa local.

Typical desserts you can have in Barcelona:

- Crema catalana : A custard pudding sealed with a coating of burnt caramel.

Mel I mato : soft white cheese served with honey.

Leche frita : Fried custard squares sprinkled with powdered sugar.

Pastisset : Semicircular little cake usually filled with almonds.
-
Menjar blanc: Almond milk pudding.
- We must not forget
churros and bunyols maybe the best cakes in Spain.

Typical drinks you can find in Barcelona

Soft drinks you will find in Barcelona:

- The orxata ( pronounced ?ortxata?), is one of the most refreshing drinks. It is manufactured with the juice of chufa a kind of papyrus which grows at the banks of the Guadalquivir.
- We can also find the
granizado : orange or lemon juice, or coffee with crushed ice in large centrifugal machines. Sweetened, frozen and not expensive.
- In the plain of Lleida, you can find a drink called drink of the poor (
beguda de pobre), made from oranges, anise and sugar. It is surprising.

Typical Alcoholic drinks in Barcelona:

- Beer (cerveza): the most spread drink. Be careful when asking for a beer, in Spain, in a bar, when you ask for a beer it means a beer in a bottle. If what you want is a draught beer you have to ask for a ?caña?.

Wine: The cradle of the growing wine is a few kilometers from Barcelona in the area called Pénedès. We can find red wines with powerful taste. Try the appellation d?origine wines, a certified quality.

Vermuth al grifo: It is wine macerated with herbs and delivered in small barrels with aerated water.

Cava: It is the Champagne, a wine semi-sparkling, very pleasant to drink, a bit fruity an greener than the French Champagne. There are different brands: Raïmat, Freixenet and Codorniu.
- Inland we can find the good
ratafias.- Moscatel: it is a sweet wine and often find with mel I mato (see desserts below). Not to miss!
